Wash and dry the meat with some paper towel and salt it. Grind the black pepper and the juniper and put some of the mixture into the bottom of an ovenproof dish (preferably one with a lid). Place the meat on top of the mixture, oil it and sprinkle the remaining grounded pepper and juniper mix on top. Add water on each side of the meat and cover the dish with a lid. Cook in a moderate/high oven (200°C) until roasted well.
