Ingredients:
pork tenderloin, cut into strips (800gr)
2 tbsps of olive oil
1 glove of garlic, chopped
1 grated onion
1 tbsp mustard (mild)
1 tb cumin
½ tb mixed spices
1 tb paprika
1 tbsp oregano
1/3 of the cup white wine (dry)
salt & pepper
For serving:
1 cup yogurt or tzatziki
2 sliced tomatoes
1 sliced red onion
3-4 tbsps grated parsley
4 pita breads
Method:
Step 1:
Mix into a large bowl the tenderloin (cut into strips), olive oil, garlic, onion, mustard, cumin, mixed spices, paprika, oregano, wine, salt and pepper.
Step 2:
Wrap the bowl and put it into the fridge. Leave the marinade in the fridge for at least 2 hours, before using it.
Step 3:
Preheat oven to 180°C.
Step 4:
Put the marinated pork in a pan and bake in the preheated oven for 30 minutes.
Step 5:
Then, turn the pork and continue baking for another 10-15 minutes or until the meat is nicely coloured, crispy and tender inside.
Step 6:
Place a large pan (upside down) at the bottom of the oven, place the pita breads on top, and bake in preheated oven to 180C for about 1 minute.
Step 7:
To serve, spread some tzatziki sauce on the pita breads and top with the pork gyros, some slices of red onion, some sliced tomato and wrap.
