Some say Halloumi should be made from cow’s milk while some traditionalists swear by goat and ewe milk.
Former pilot turned cheesemaker Pantelis Panteli has become a bastion of an old tradition, making the Cypriot cheese exclusively from ewe’s milk.
Reuters interviewed Panteli and presented his story of how after being made redundant following the closure of Cyprus Airways in 2013, turned his luck around by trying his hand at making halloumi with guidance from his mother-in-law.
