Peel the potatoes, chop and cook in plenty of salted boiling water until soft. Roughly grate the courgettes, salt and leave them to release any water. Heat the oil in a frying pan and fry the onion until soft. Add the grated courgettes, stir and cook for 7-8 minutes.
Drain the potatoes and mash them with a fork (do not blend). Stir in half of the butter, the fresh cream, cheese, the courgette mixture, a pinch of nutmeg, salt and pepper. Work the mixture with your hands and make cheese croquettes shaped like small burgers. Fry them for approximately 2 minutes on each side and place them on kitchen roll to drain. Serve hot.

1/3 cup fresh cream
2 tbsps butter
2 tbsps olive oil
3/4 cup grated kefalotiri cheese
Nutmeg, salt, pepper
Oil for frying
