Put all the ingredients for the syrup in a small pan, stirring continuously until the sugar dissolves, for approximately 15 minutes.
Add the pears, reduce heat, and simmer for another 30 minutes.
Allow to cool down and then place in the fridge overnight for the pears to absorb all flavours.
Serve with vanilla ice-cream or fresh cream.

2 tsp cinnamon
