Wash and dry the carob twigs, and place in an ovenproof dish or pan.
Wash and dry the chicken, season it well and then place over the twigs, pressing down flat.
Cook in a moderate oven at 180°C for 1½ to two hours.
Serve with salad and oven-roasted potatoes.
