St Fanourios’ cake is a Lenten cake made on the Saint’s feast day (27/08) and is traditionally offered to the faithful as a blessing. As a custom the pie is offered by worshippers to help them find what they’re looking for, be it a lost object or a future spouse.

To make the cake, preheat the oven to 170-180 ° C. Put seed oil, 250 g. orange juice, sugar into a large bowl and stir until sugar melts. Put 125 grams, orange juice, soda, cinnamon, cloves into another bowl and stir with a fork until soda foams. Add the soda mixture to the sugar bowl and stir. Put the flour, nuts, salt, raisins in the bowl and mix until the ingredients are homogenized. Transfer to a 25×30 cm buttered pan and bake for 50-60 minutes. Let the cake cool and serve with powdered sugar and spearmint leaves.
