Extra delicious and low-calorie, Mahalepi is maybe the perfect antidote to hot summer days in Cyprus!
Ingredients:
-5 cups of water
-1 cup of cornstarch (or nisiaste flour which is a maize powdered starch)
-1-2 heaped tbs sugar
-rosewater, for extra fragrance and sweetness while serving
Directions:
-Put in a large pot the cornflour (or nisiaste/maize powdered starch) with the water in low heat. Stir continuously until the mixture begins to bubble.
-Pour the sugar and stir for another 5 minutes until it thickens to a cream.
-Wet a tray with water and pour it in.
-Let it cool and place it in the fridge until is firm and cold. It needs approximately 5 hours.
*Serve the dessert by adding ice cold water (and optional some ice cubes) to cover the mahalepi and a little rose cordial. Also you can add a scoop of ice cream if you are into it.
