Wash and dry the meat, and place in an oven-proof dish or pan. Add the wine, olive oil and seasoning. Cover with a lid or with baking paper and foil, and cook in a hot oven at 220°C for two hours. Uncover and continue cooking in a moderate oven at 180°C until it is nicely browned.
