Ingredients
- 4 salmon fillets (approximately 800 gr), without skin and bones
- 2 tablespoons olive oil
- Salt and pepper
Rocket dressing:
- 1 bunch of rocket,
- ½ cup lemon juice
- 1 ½ cup olive oil
- Salt and pepper
Potatoes with orange and ginger:
- 8-12 small potatoes (the fresher the better)
- Juice of 2 oranges + zest of 1 orange
- 1/4 cup grated fresh ginger,
- 1 cup (about) vegetable broth (ready or homemade)
- Salt and pepper
Method
Step 1:
If the potatoes are fresh, leave them with their peel on. Rub them well with a brush under running water and open 1-2 holes with a fork. If they are not fresh, peel them off. Preheat the oven to 190 ° C.
Step 2:
Place the potatoes with the orange juice, zest and ginger in a pan and add as much as vegetable juice is needed to fill half of the pan. Salt and pepper and bake in the oven for about 45 minutes until golden brown, turning them once, in the middle of baking. Before serving, cut them into slices.
Step 3:
Slice the rocket and mix it together with all the other dressing ingredients into a blender, or a mixer, until it becomes a smooth, velvety, green mixture.
Step 4:
Spread olive oil on the salmon fillets and salt them. Spread them in a dish (anti-stick or coated with non-stick labels) and bake in the oven (at 190 ° C) for 15 minutes. Serve with potatoes and pour over the dressing.
