Potato loukoumades

Ingredients

3 ½ cups rustic flour

3 ½ cups flour 00

½ teaspoon of salt

1 sachet of yeast or 5 tablespoons of foam

2 medium boiled potatoes

Tepid water for kneading

For the syrup:

6 cups of sugar

3 cups of water

3 cinnamon sticks

6 – 8 carnations

1 lemon peel and juice

Rosewater

Method

Step 1:

Boil all ingredients for the syrup for about 10 minutes. Allow to cool. Sift the two types of flour with salt and add the yeast. Melt the potatoes well and add them to the flour. Throw a little bit of lukewarm water. Αllow to rise for about an hour.

Step 2:

If you’re using foam, fry the loukoumades immediately. Pour a lot of oil into a frying pan and allow it to warm up.

Step 3:

With one hand, take a little slurry and with the other, cut the loukoumades with a teaspoon and put them into the pan. Let them brown and put them in syrup and then in a colander.

Step 4:

Serve.
