- 2 egg yolks
- 1 teaspoon mustard
- 1 pinch of sugar
- 1 tablespoon of lemon juice
- 180 ml (3/4 cups) of corn oil or sunflower oil,
- Salt and pepper
Take a bowl with a small diameter – deep but narrow – to concentrate the ingredients around the mixer beaters and mix them evenly.
Add the yolks with the mustard, sugar, 1 strong pinch of salt, pepper and lemon juice and beat them to homogenise.
Then add a little bit (a teaspoon) of the oil, continuing to mix.
