200 g (1 1/3 cups) flour
½ cup sugar
100 g (6 ½ tablespoons) butter + extra for the form (about ½ pack)
4 tablespoons of milk
1 tablespoon brandy
2 eggs, separated
1 teaspoon baking powder
1 tablespoon of cocoa powder
1 teaspoon of vanilla
1 pinch of salt
Preheat the oven to 210 ° C. Butter a medium round form with a hole and fry it. Mix flour with baking powder and vanilla.
Mix the butter with sugar until it is soft and add the egg yolks one by one. Then, stir in the flour and milk.
Mix the egg whites separately in a tight meringue and incorporate it into the yolk mixture.
Put half the mixture in the form and stir the cocoa and brandy in the rest. Place a spatula on various points of the dough to mix the two mixes.
Bake the cake for 10 minutes, lower the oven to 180 ° C and continue baking for another 20 minutes, until a wooden skewer that you will insert into the centre of the cake becomes dry. Allow to cool down while in the mold, then remove it and let it cool down.
